The research team belongs to the University Institute of Food Engineering of the UPV and has a multidisciplinary character being composed of the i-Food group to which the two main researchers belong and the Honey Laboratory.
In the case of the i-Food group, the following lines of research should be highlighted: science and technology of fish and fishery products, risk analysis in the food industry, use of biopreservation techniques, application of new techniques in sensory analysis and acceptability of products by consumers and study of the antioxidant activity of various natural products and their application to food.
For the Honey laboratory, it should be noted that its activity is focused on quality management and safety in the agri-food chain. In addition, it has an extensive experience in analytical techniques of gas chromatography (GC/MS-FID), liquid chromatography (LC/MS-UV-DAD-ELSD), microscopy and spectrophotometry, among others.
Between them, they have 14 recognized research and 3 recognized transfer projects, 42 doctoral theses, in addition, they have published more than 320 articles (indexed in JCR) and 8 patents.
